Why cups and pounds are not directly interchangeable

A cup is a unit of volume (how much space something occupies), while a pound is a unit of mass (how much matter it contains). The conversion factor between them depends entirely on the density of the ingredient. Water has a density of about 236.6 g per US cup, but all-purpose flour has only 125 g per cup because its particles trap air. That means the same cup volume holds nearly twice as much water by weight as it holds flour. This is why baking recipes that call for "two cups of flour" can produce inconsistent results: how you fill the cup changes the weight by 20-30%, while a scale always gives the exact same measurement.

How this converter calculates the result

The converter stores the density of each ingredient in grams per US cup. For a cups-to-pounds conversion, it first adjusts for cup type (US = 236.6 mL, metric = 250 mL, UK = 284.1 mL), then multiplies the cup count by the density to get grams, and finally divides by 453.592 to convert grams to pounds. For a pounds-to-cups conversion, the process runs in reverse: multiply pounds by 453.592 to get grams, divide by the ingredient density to get US cups, then scale to the selected cup type. US cups, metric cups, and UK cups: what is the difference?

Three different cup standards are in common use. The US customary cup is 236.588 mL (half a US pint). The metric cup, used in Australia and Canada, is exactly 250 mL, about 5.7% larger than the US cup. The UK / imperial cup is 284.131 mL (half an imperial pint), about 20% larger than the US cup. A recipe from an Australian cookbook that calls for "2 cups of flour" is asking for a meaningfully larger amount than a US recipe using the same language, so matching the cup type to the recipe origin matters.

Tips for accurate measurement in baking

For most baked goods, a digital kitchen scale beats cup measures on accuracy and reproducibility. The spoon-and-level method for dry ingredients (spoon flour gently into the cup, then scrape the top flat with a knife) gives the density values shown in this converter. Scooping the cup directly into the flour bag compacts the flour and can add 20-40 g per cup, enough to make bread dense or cookies dry. Liquids are more predictable in a cup than dry goods, but a scale is still more reliable. If your recipe lists both weight and volume, always prefer the weight.

How many cups are in a pound of flour?

For all-purpose flour (unsifted, spooned into the cup), 1 pound equals approximately 3.63 US cups.
