How long does it take to defrost a turkey?

The USDA Food Safety and Inspection Service (FSIS) recommends two safe methods for thawing a frozen turkey: in the refrigerator or in cold water. In the refrigerator, plan for approximately 24 hours of thaw time for every 4 to 5 pounds of turkey. A 16-pound bird, for example, takes 3 to 4 days. The cold water method is roughly ten times faster: allow 30 minutes per pound, submerging the turkey in cold water and replacing the water every 30 minutes. A 16-pound turkey thaws in about 8 hours this way, but it must be cooked immediately after thawing.

Refrigerator vs. cold water thawing

Refrigerator thawing is the safest and most hands-off method. The turkey stays at a consistently safe temperature (below 40 F / 4 C) throughout, bacteria cannot multiply, and you can store the thawed turkey in the fridge for 1 to 2 more days before cooking. The only drawback is time: a large turkey can take 5 to 6 days. Cold water thawing is much faster but requires attention. You must keep the turkey fully submerged in its original wrapper or a leakproof bag, and replace the water every 30 minutes to prevent it from warming into the danger zone (40 to 140 F). Once thawed by the cold water method, cook the turkey immediately - do not refreeze it. Both methods are USDA-approved. Thawing at room temperature and in hot water are NOT safe.

Safety rules for thawing turkey

Never thaw a turkey on the kitchen counter at room temperature. The outer layers enter the bacterial danger zone (40 to 140 F) while the inside is still frozen, allowing harmful bacteria such as Salmonella to multiply rapidly. Similarly, avoid hot water thawing. Always keep turkey at 40 F or below during thawing. After cold water thawing, cook the bird right away. After refrigerator thawing, you have 1 to 2 days to cook. If you forget to thaw and are out of time, you can cook a frozen turkey directly - it will simply take about 50 percent longer than a thawed turkey.

What about microwave thawing?

Microwave thawing is approved by the USDA as a third safe option, but this calculator does not include it because thaw times vary greatly by microwave wattage and turkey size. If you use the microwave, follow your microwave manual, check frequently, and cook the turkey immediately after thawing since some parts may begin to cook during the process. A microwave is best reserved for very small turkeys or turkey pieces rather than a full 20-pound bird.

Can I refreeze a turkey after thawing?

You can safely refreeze a turkey that was thawed in the refrigerator, as long as it stayed at or below 40 F the entire time. A turkey thawed by the cold water method must not be refrozen - it must be cooked first.
