How much turkey do you need per person?

The standard rule used by caterers and Thanksgiving planners is 1 pound of whole raw turkey per adult and 0.5 pounds per child. These numbers account for the bone, cavity and skin that make up a significant portion of a whole bird. If you want leftovers for the next day, plan on 1.5 pounds per adult and 0.75 pounds per child instead. For very small gatherings (under five people), bump up slightly further because small birds have a higher proportion of bone relative to meat.

Why the small-bird adjustment matters

A 6-pound turkey sounds like plenty for four people at 1.5 lb each, but in practice you will find less edible meat than you expect. Birds under about 12 pounds have a higher bone-to-meat ratio, which means a greater share of the weight goes to structure rather than dinner. This calculator automatically adds a 25% buffer when the raw calculation comes in under 12 pounds, preventing the disappointment of a bird that looks large enough but yields surprisingly little meat.

Thawing your turkey safely

The USDA recommends thawing a frozen turkey in the refrigerator at 40 F (4 C) or below. Allow 24 hours for every 4 to 5 pounds. A 14-pound bird therefore needs 3 to 4 days, so plan your purchase accordingly. As an alternative, the cold-water method takes about 30 minutes per pound but requires the bird to stay submerged in a sealed bag and have the water changed every 30 minutes - it works for a last-minute situation but the refrigerator method is far more hands-off. Never thaw a turkey on the counter at room temperature.

Roasting time at 325 F

The USDA-recommended roasting temperature is 325 F (163 C). An unstuffed turkey takes approximately 15 minutes per pound, while a stuffed turkey takes about 17.5 minutes per pound because the stuffing slows heat penetration. These are estimates only - always confirm doneness with a meat thermometer inserted into the thickest part of the thigh, away from the bone. The reading must reach 165 F (74 C). Once out of the oven, rest the bird for at least 30 minutes before carving to allow juices to redistribute.

Should I buy one large turkey or two smaller ones?

Two smaller birds often work better for large gatherings of 20 or more people. Birds over 18-20 pounds are harder to maneuver, take very long to cook, and can cook unevenly with overcooked outer meat before the center reaches temperature. Two 12-pound turkeys roasted side by side will be done in roughly the same time as a single large bird and will be juicier and easier to handle.

How long does it take to thaw a turkey in the fridge?

Allow 24 hours of refrigerator thawing time for every 4 to 5 pounds of turkey. A 12-pound bird needs 2 to 3 days, while an 18-pound bird needs 4 to 5 days. Keep the turkey in its original packaging on the bottom shelf of the fridge to prevent any drips from contaminating other food. Once fully thawed it can stay safely refrigerated for 1 to 2 more days before cooking.

Can I roast a turkey the day before Thanksgiving?

Yes. Roast the turkey, let it cool to room temperature within 2 hours, carve it, and refrigerate the meat in shallow airtight containers. Reheat sliced turkey at 325 F in a covered baking dish with a splash of stock or broth to keep it moist. Most cooks find pre-roasted turkey reheats well and actually makes the day-of much less stressful.

What internal temperature should turkey be cooked to?

The USDA and food safety authorities require turkey to reach 165 F (74 C) as measured in the thickest part of the thigh, away from the bone. Check multiple spots including the breast and the inner wing joint. When stuffed, the stuffing itself must also read 165 F. Once carryover cooking during resting is considered, pulling the bird at 160-162 F and resting 30 minutes will usually bring the final temperature up to the safe threshold.

What is the difference between stuffed and unstuffed cooking time?

An unstuffed turkey at 325 F takes about 15 minutes per pound. A stuffed turkey takes roughly 17.5 minutes per pound because the cold stuffing packed in the cavity absorbs heat and slows the cooking of the surrounding meat. Many cooks prefer to bake the stuffing separately (as dressing) to reduce total cook time and to avoid the risk of undercooked stuffing even when the turkey itself is done.
